Toasted Quinoa Salad

3/4 cup uncooked quinoa
1 1/2 cups water
1 cup diced carrot
1/2 red bell pepper, chopped
1/4 cup minced fresh parsley
2 scallions, sliced
1 1/2 tablespoons low sodium soy sauce
1/4 cup lemon juice
1/4 teaspoon tabasco sauce
1 clove garlic, mincedRecipe
Rinse the quinoa in a fine-meshed wire strainer under cool running water. Place the quinoa in a heavy-bottomed pot and dry toast until a few grains begin to pop. Add the water and bring to a boil. cover, reduce heat, and simmer for 15 minutes, or until the quinoa had absorbed all the liquid. Remove from the heat and let stand for 10 minutes. Fluff with a fork.
Mix together the carrot, bell pepper, parsley, scallions in a large bowl. When the quinoa has cooled, add it to the bowl and combine. Whisk together the soy sauce, lemon juice, tabasco, and garlic. Pour over the other ingredients and toss to mix.
