    Honey Sweet Potato Biscuits

    List of Ingredients




    2 cups flour
    1 tablespoon baking powder
    1/4 cup Apple sauce un sweetened
    1 tablespoon grated orange peel
    1 tablespoon grated lemon peel
    1 tsp of Ginger
    3/4 cup mashed cooked sweet potato
    1/3 cup honey***
    Sub for honey is 1 ¼ sugar plus ¼ of water

    Recipe



    Combine flour, baking powder in large bowl. Cut in Apple sauce until mixture resembles size of small peas. Add orange and lemon peels, sweet potato and honey; mix well. makes soft, but not sticky, dough. Knead 3 or 4 times on lightly floured surface. use oatmeal flour

    Pat dough to 1-inch thickness and cut into 2 1/4-inch rounds. Place on ungreased baking sheet.

    Bake in preheated 400°F oven 15 to 18 minutes or until lightly browned. Serve warm.

    Makes 12 biscuits.
