    Recipe Introduction


    This calming mid-day dish features aromatic oregano, an old folk remedy for soothing daytime headaches & stomachaches that are caused by stress.


    List of Ingredients




    2 green bell peppers, cored, seeded & finely chopped
    1 large cucumber, peeled, seeded, & finely chopped
    2 ripe medium tomatoes, cored & finely chopped
    2 scallions, minced
    1 tablespoon minced fresh oregano or 1 teaspoon dried
    2 tablespoons fresh lemon juice
    freshly ground black pepper to taste
    red leaf lettuce for serving

    Recipe



    In a medium bowl combine the peppers, cucumber, tomatoes, scallions, oregano, lemon juice, pepper & toss well. Place on nests of lettuce leaves & serve as a side to your Lunch and dinner, Makes 4 servings;
