    Creamy Chicken Enchiladas


    List of Ingredients


    • 1 T margarine
    • 1 med onion
    • 1 (4.5oz) can chopped green chilies, drained
    • 1 (8oz) pkg cream cheese, softened and cut up
    • 3 1/2 c. chopped cooked chicken breast
    • 8 (8") flour tortillas
    • 2 (8oz) pkg Monterey Jack cheese, shredded
    • 2 c. whipping cream


    Instructions


    1. Melt butter in lg skillet, add onion and saute 5 min. Then add chilies and saute 1 min.
    2. Stir in cream cheese and chicken, stirring constantly until cream cheese melts.
    3. Spoon 2-3 T chicken mixture down conter of each tortilla. Roll up sides, place seam side down in lightly greased 9x13 dish.
    4. Sprinkle with Monterey Jack cheese, drizzle with whipping cream.
    5. Bake at 350 for 45 min
