Creamy Chicken Enchiladas
List of Ingredients
- 1 T margarine
- 1 med onion
- 1 (4.5oz) can chopped green chilies, drained
- 1 (8oz) pkg cream cheese, softened and cut up
- 3 1/2 c. chopped cooked chicken breast
- 8 (8") flour tortillas
- 2 (8oz) pkg Monterey Jack cheese, shredded
- 2 c. whipping cream
Instructions
- Melt butter in lg skillet, add onion and saute 5 min. Then add chilies and saute 1 min.
- Stir in cream cheese and chicken, stirring constantly until cream cheese melts.
- Spoon 2-3 T chicken mixture down conter of each tortilla. Roll up sides, place seam side down in lightly greased 9x13 dish.
- Sprinkle with Monterey Jack cheese, drizzle with whipping cream.
- Bake at 350 for 45 min
