    Deluxe Rhubarb Pie

    unbaked 9inch pie shell
    3 c rhubarb, cut fine
    2 c sugar
    5 T flour
    3 well beaten eggs
    red food coloring
    1/4 c flour
    1/4 c brown sugar
    1/4 c oatmeal
    1/4 t baking powder
    1/4 t soda
    1/4 c or more butter

    Recipe



    mix rhubarb, 2 c sugar, 5 T flour and eggs.
    Let stand while you prepare the topping.
    Topping:
    remaining flour, brown sugar, oatmeal, powder, soda.
    Cut in the butter until mixture is crumbly.
    Pour rhubarb mixture into shell in a high edged 9inch pie plate.
    Sprinkle topping over it
    Bake at 425 for 25 mintues OR 350 for 30 minutes.
