Peppermint Bonbon Cake

2 c. flour
1 1/2 c sugar
4 t. Baking Powder
1 t. salt
1/2 c shortening
1/4 t peppermint extract or a few drops of oil of peppermint
1 c milk
4 egg white, unbeaten

Sift together flour, sugar, baking powder and salt. Add shortening and peppermint extract. Add 2/3 of the milk and mix on slow to medium speed for 2 minutes. Add remaining milk and egg whites. Beat for 2 more minutes. Pour about half of the batter into prepared pans. To the remaining batter add sufficient red food coloring to make pink. Mix until well blended (about 1/2 minute). Pour batter here and there over white batter to obtain marble effect, cut through with knife several times.

Time: 30 to 35 minutes
Peppermint bonbon icing
Make fluffy white Icing but omit vanilla. Then add 1/2 t peppermint extract. Then blend in sufficient red food coloring to get pink color. Ice cake but reserve a few T. to make bonbons. Smooth icing on top. Melt together 1 sq. chocolate and 1/4 t. shortening. Pour over cake keeping inside ridge. When hardened slightly, drop pink icing on top to make 5 bonbons.
