3 c peaches, fresh or frozen, sweetened and sliced
1 t grated lemon peel
3 T lemon juice
2 1/2 T tapioca
1 1/2 c flour
2 t Baking Powder
1/4 t salt
9 T butter
1 egg, beaten
1/3 c milk
3/4 c sugar
1/2 c waterRecipe
Grease a 2 qt casserole.
Combine peaches with lemmon peel, lemon juice, adn tapioca.
Sift flour, powders and salt.
Cut in 6 T butter until it looks like coarse crumbs.
Combine egg with milk.
Stir into flour mixture until just moistened.
Drop by spoonfull over peaches.
Combine sugar, water and remaining butter, bring to a boil and pour over the batter.
Bake at 375 degrees for 45 minutes.
