    3 c. peaches, fresh or frozen, sweetened and sliced
    1 t. lemon peel
    3 T. lemon juice
    2 1/2 T. tapioca
    1 1/2 c. flour, sifted
    2 t. baking powder
    1/4 t. salt
    6 T butter
    1 egg, beaten
    1/3 c. milk
    3/4 c. sugar
    1/2 c. water
    3 T butter

    Recipe



    Grease 2 qt. casserole. Place peaches in bottom of pan. Mix lemon, lemon juice and tapioca. Sift together flour, baking powder and salt. But butter into dry mixture coarsely. Combine egg with milk and stir into flour mixture until just moistened. Drop by spoonful over peaches. Combine sugar, water and 3 T. butter. Bring to a boil and pour over batter. Bake in moderate oven at 375.
