    Rhubarb-coconut flip

    5 c rhubarb
    1 c sugar
    1/4 cornstarch
    1/2 t cinnamon
    3 T water
    1 box yellow or white Jiffy cake mix
    1 stick oleo
    1/2 c coconut or more

    Recipe



    Grease 8x12 pan.
    Put rhubarb in bottom, then make syrup with sugar, cornstarch, cinnamon and water.
    Bring to quicky boil.
    Syrup will be very thick.
    POur over rhubarb.
    Bprinkle cake mix over this.
    Dot with sticks of oleo.
    Sprinkle coconut on top
    Bake at 350 uncovered for 50-60 mintues or until golden brown.
