    This is a delicious Thai-style grilled chicken satay made of marinated chicken served with a peanut sauce.

    INGREDIENTS
    2 1/2 lb. boneless chicken breasts, cut into 1 1/2-2" cubes

    For the MARINADE:
    4 cloves garlic, chopped
    4 tsp. ground coriander
    4 tsp. light brown sugar
    1 tbsp. black pepper
    2 tsp. salt
    1/2 cup reduced sodium soy sauce
    4 tsp. ginger, chopped
    2 tbsp. lime juice
    6 tbsp. oil

    For the Garnish
    1/4 c. fresh coriander, finely chopped

    For the PEANUT SAUCE:
    1 c. chunky peanut butter
    1-2 tsp. Asian hot chili sauce
    2 cloves garlic, crushed
    3 tbsp. honey
    1/4 cup lime juice
    1/4 cup reduced sodium soy sauce
    1/2 cup hot water

    Recipe



    To marinate the chicken-Combine all marinade ingredients, add to the cubed chicken and marinate covered in refrigerator for minimum of 4-6 hours or better, overnight. Turn several times during marinating process.

    To cook-Grill or broil chicken on skewers that have been throughly soaked in water. Cook until tender (8-10 minutes). Sprinkle with fresh coriander and serve with peanut sauce.

    To make peanut sauce, place peanut butter in food processor. Add chili sauce, garlic, honey,lime juice, shoyu and hot water until smooth, thick paste is formed. Sauce can be made ahead. Cover and refrigerate, but bring to room temperature before serving.Pour the sauce into a nice serving bowl. Serve with the chicken satay skewers.
