    Beth's Ugly Duckling Cake

    List of Ingredients


    • 1 yellow cake mix
    • 1- 16 oz. can fruit cocktail
    • 2 1/3 c. coconut
    • 2 eggs
    • 1/2 c firmly packed brown sugar
    • 1/2 c butter or oleo
    • 1/2 c granulated sugar
    • 1/2 c evaporated milk


    Instructions


    1. Combine cake mix, fruit cocktail with syrup, 1 cup of the coconut and the eggs in large mixer bowl.
    2. Blend, then beat at med. speed for 2 minutes.
    3. Pour into greased 9 x 13 pan.
    4. Sprinkle with brown sugar.
    5. Bake at 325 for 45 minutes.
    6. In small pan, bring sugar, butter,and evaporated milk to a boil and boil 2-3 minutes.
    7. Stir in rest of coconut.
    8. Spoon over hot cake in pan or spoon a few tablespoons over hot cake and reheat sauce and use when you serve the cake.
