    Dill Pickle Rollups

    8 dill pickles (choose straight ones)
    8 slices deli ham (not sliced thinly)
    8 oz. cream cheese, softened
    2 Tbsp. prepared horseradish

    Pat pickles dry with paper towels.

    Place ham slices on paper towels to blot away excess moisture.

    Combine cream cheese and horseradish.

    Lay out ham slices on individual pieces of plastic wrap, with the short end towards you.

    Divide cream cheese mixture among ham slices. Spread mixture to sides of ham slices, leaving last 1" of ham farthest away from you empty.

    Place 1 pickle at bottom edge of each ham slice and roll tightly. Wrap tightly in saran and refrigerate at least four hours.

    To serve, unwrap and slice crosswise into 3/4" thick rounds.
