Spinach Salad w/Bacon Dressing
2 cups spinach, torn into pieces
2 cups assorted lettuce (Romaine, iceberg), torn into pieces
1/4 cup celery, diced small
1 green onion, sliced
5 slices bacon, cut into 1" pieces
olive oil, as needed (see below)
1/4 cup wine vinegar
1/2 tsp Worcestershire sauce
2 Tbsp sugar
2 Tbsp bleu cheese (or more, to taste)
Mix spinach, lettuce, celery and green onion in serving bowl.
Saute bacon until browned. Remove from drippings (reserve drippings) and drain. You should have 1/4 cup of bacon drippings; if you have less than that, add olive oil to make 1/4 cup.
Mix hot drippings with wine vinegar, Worcestershire and sugar and pour over salad. Top with cooked bacon and bleu cheese and serve immediately.
Serves 4 - 6.
