Batter Rolls
Makes 18 rolls
List of Ingredients
- 3 1/4 cups all purpose flour
- 1 pkg active dry yeast
- 1 1/4 cups milk
- 1/2 cup shortening
- 1/4 cup sugar
- 1 teaspoon salt
- 1 egg
- 1 tablespoon poppy seed or sesame seed (optional)
Instructions
- Combine 2 cups of flour and 1 pkg of yeast in a large mixing bowl.
- In a saucepan, combine milk, shortening, sugar and salt. Heat until warm (115-120 degrees) and shortening is almost melted, stirring constantly.
- Add mixture to flour and yeast in mixing bowl. Add 1 egg and beat at low speed for 30 seconds. Scrape sides of bowl constantly.
- Beat at high speed for 3 minutes.
- Add 1 1/4 cups of flour and beat at low speed for about 2 minutes or until batter is smooth.
- Cover and let rise in warm place until double (about 1 hour).
- Beat down with a wooden spoon, and then let it rest for 5 minutes.
- Spoon into greased muffin cups, filling each about half full. Cover and let rise until nearly double (about 30 minutes).
- Brush tops lightly with milk, sprinkle with poppy seed or sesame seed if desired.
- Bake in 375 degree oven for 15-18 minutes.
