    Batter Rolls

    Makes 18 rolls


    List of Ingredients


    • 3 1/4 cups all purpose flour
    • 1 pkg active dry yeast
    • 1 1/4 cups milk
    • 1/2 cup shortening
    • 1/4 cup sugar
    • 1 teaspoon salt
    • 1 egg
    • 1 tablespoon poppy seed or sesame seed (optional)


    Instructions


    1. Combine 2 cups of flour and 1 pkg of yeast in a large mixing bowl.
    2. In a saucepan, combine milk, shortening, sugar and salt. Heat until warm (115-120 degrees) and shortening is almost melted, stirring constantly.
    3. Add mixture to flour and yeast in mixing bowl. Add 1 egg and beat at low speed for 30 seconds. Scrape sides of bowl constantly.
    4. Beat at high speed for 3 minutes.
    5. Add 1 1/4 cups of flour and beat at low speed for about 2 minutes or until batter is smooth.
    6. Cover and let rise in warm place until double (about 1 hour).
    7. Beat down with a wooden spoon, and then let it rest for 5 minutes.
    8. Spoon into greased muffin cups, filling each about half full. Cover and let rise until nearly double (about 30 minutes).
    9. Brush tops lightly with milk, sprinkle with poppy seed or sesame seed if desired.
    10. Bake in 375 degree oven for 15-18 minutes.
