Lentil Salad
This is a quick, easy salad recipe that can be used either as a side dish or a main dish.
List of Ingredients
- 1 pound lentils---rinsed and drained
- 5 cups water or unsalted chicken or vegetable broth
- 1 cup Italian or viniagrette dressing
- 2 hard boiled eggs
- 2 diced tomatoes
- 1/2 cup sweet onions-chopped
- 2 cups shredded cheese
- 1 cup cucumber seeded and diced
Instructions
- In a large saucepan with a lid, cook the lentils in the broth or water, covered, until tender, about 15 or 20 minutes, stirring occasionally. Drain well. Toss warm lentils with dressing. Allow to cool.
- Stir in eggs, tomatoes, onion, cheese, and cucumber.
- Can be served immediately or chilled for several hours. Tastes best served the day it is made.
