    Lentil Salad

    This is a quick, easy salad recipe that can be used either as a side dish or a main dish.


    List of Ingredients


    • 1 pound lentils---rinsed and drained
    • 5 cups water or unsalted chicken or vegetable broth
    • 1 cup Italian or viniagrette dressing
    • 2 hard boiled eggs
    • 2 diced tomatoes
    • 1/2 cup sweet onions-chopped
    • 2 cups shredded cheese
    • 1 cup cucumber seeded and diced


    Instructions


    1. In a large saucepan with a lid, cook the lentils in the broth or water, covered, until tender, about 15 or 20 minutes, stirring occasionally. Drain well. Toss warm lentils with dressing. Allow to cool.
    2. Stir in eggs, tomatoes, onion, cheese, and cucumber.
    3. Can be served immediately or chilled for several hours. Tastes best served the day it is made.
