    Scalloped Corn and Tomatoes


    List of Ingredients


    • 2 cans diced tomatoes, drained
    • 1 can whole kernel corn, drained
    • 1 can creamed corn
    • 2 eggs, beaten
    • 1.4 cup flour
    • 1 tablesppon sugar
    • 1 teaspoon pepper
    • 1 onion, finely chopped
    • 1 teaspoon garlic powder
    • 1/3 cup margarine or butter
    • 2 cups bread crumbs
    • 1/2 cup parmesan cheese


    Instructions


    1. Preheat oven to 350 degrees. Spray a 2 quart casserole dish with cooking spray.
    2. Stir together tomatoes, corn, eggs, flour, sugar and pepper. Pour into casserole dish.
    3. In a skillet, over medium heat, melt magarine. Saute onions til soft. Combine with the bread crumbs, garlic and cheese. Sprinkle over casserole.
    4. Bake for 50-60 minutes. Serves 8
