Scalloped Corn and Tomatoes
List of Ingredients
- 2 cans diced tomatoes, drained
- 1 can whole kernel corn, drained
- 1 can creamed corn
- 2 eggs, beaten
- 1.4 cup flour
- 1 tablesppon sugar
- 1 teaspoon pepper
- 1 onion, finely chopped
- 1 teaspoon garlic powder
- 1/3 cup margarine or butter
- 2 cups bread crumbs
- 1/2 cup parmesan cheese
Instructions
- Preheat oven to 350 degrees. Spray a 2 quart casserole dish with cooking spray.
- Stir together tomatoes, corn, eggs, flour, sugar and pepper. Pour into casserole dish.
- In a skillet, over medium heat, melt magarine. Saute onions til soft. Combine with the bread crumbs, garlic and cheese. Sprinkle over casserole.
- Bake for 50-60 minutes. Serves 8
