    Zucchini-Cheddar Casserole


    List of Ingredients


    • 2 pounds zucchini; sliced (6 cups)
    • 1 cup sour cream
    • 2 eggs; seperated
    • 2 tablespoons flour
    • 1 1/2 cup cheddar cheese; grated
    • 6 slices bacon; cookedtil crisp, drained and crumbled
    • 1/2 cup bread crumbs
    • 1 tablespoon butter or margarine; melted


    Instructions


    1. Cook zucchini in salted water until tender; about 15 minutes. Drain and salt lightly.
    2. Lightly beat egg yolks. Mix with sour cream and flour.
    3. Beat egg whites until stiff. Gently fold into egg mixture.
    4. In a 12 x 7 baking dish, layer half the zucchini, then layer half the sour cream mixture and then half the cheese. Sprinkle with bacon. Repeat. Top with bread crumbs and margarine.
    5. Bake uncovered at 350 degrees for 20-25 minutes.
    6. Serves 6 to 8
