Zucchini-Cheddar Casserole
List of Ingredients
- 2 pounds zucchini; sliced (6 cups)
- 1 cup sour cream
- 2 eggs; seperated
- 2 tablespoons flour
- 1 1/2 cup cheddar cheese; grated
- 6 slices bacon; cookedtil crisp, drained and crumbled
- 1/2 cup bread crumbs
- 1 tablespoon butter or margarine; melted
Instructions
- Cook zucchini in salted water until tender; about 15 minutes. Drain and salt lightly.
- Lightly beat egg yolks. Mix with sour cream and flour.
- Beat egg whites until stiff. Gently fold into egg mixture.
- In a 12 x 7 baking dish, layer half the zucchini, then layer half the sour cream mixture and then half the cheese. Sprinkle with bacon. Repeat. Top with bread crumbs and margarine.
- Bake uncovered at 350 degrees for 20-25 minutes.
- Serves 6 to 8
