List of Ingredients
4 tbsp. olive oil
◦1/2 c. chopped onion
◦2 cloves garlic minced
◦2 c. salsa
◦3 tbsp. water
◦1/4 c. chili powder
◦1/2 tsp. cumin
◦1/2 tsp. cinnamon
◦1 lb. cooked shredded chicken
◦1 c. refriend beans
◦6 flour toritllas
Recipe
Heat oven to 425 degrees. Lightly grease a med. baking dish. Heat 2 tbsp. of oil in saucepan over med. low heat. Saute onion and garlic in oil until tender. Stir in salsa and water. Season with chili powder, cumin, and cinnamon. Transfer mix to blender and blend until smooth. Return to saucepan stir in chicken and cook until heated through. Spoon equal amounts of refried beans down center of each tortilla and top with equal amounts of chix mix. Fold tortillas over filling and secure with toothpicks. Arrange seams side down in pan and brush with remaining oil. Bake 15 min. turning every 5 min.
