Beer Cheese Soup

List of Ingredients
2 tbsp. oleo
◦1/2 c. chopped onion
◦1/2 tsp. thyme
◦1/2 tsp. white pepper
◦1/4 tsp. cayenne
◦2 1/2 c. chicken broth
◦1/2 c. beer
◦3 tbsp. cornstarch divided
◦1 c. heavy cream
◦3 c. shredded colby cheese
◦1 tsp. hot sauce
Recipe
Melt butter in lg. pot Add onion, thyme, and peppers. Cook until onions are tender 3-4 mins. Combine broth, beer and 2 tbsp. corn starch stirring until cornstarch is dissolved. Add to pot and bring to a boil. Reduce heat. Simmer 5 mins. Add cream. Toss cheese with 1 tbsp. cornstarch. Gradually add cheese to soup stirring until melted before adding more cheese. Add hot sauce. Serve.
