"Buttery Peanut Brittle"

Best Peanut brittle ever! While I was a housekeeper (years ago) for Pat, she was making tons of this Peanut Brittle for a bazaar for her childs school. I would smell this cooking all day while I did my work. Pat let me sample the goods and I had to have the recipe... This is the BEST !
List of Ingredients
2 c. Sugar
1 c. Light Corn Syrup
1/2 c. Water
2 sticks Butter
2 c. Raw or Roasted Peanuts (unsalted)
1 t. Baking SodaRecipe
(butter 2 cookie sheets)
Directions:
Combine sugar, corn syrup, and water in 3 qt. heavy pan, cook over medium to high heat. Put in candy thermometer. Cook and stir until sugar dissolves. When syrup starts to boil, blend in butter. Stir continually. Add nuts when temperature reaches soft crack stage (280 degrees.) Stir constantly until temp. reaches hard crack stage (305 degrees.) Remove from heat, quickly stir in baking soda, mixing thoroughly. Pour onto the 2 buttered cookie sheets. Let set about 5 minutes then loosen candy from sheets and turn over. Before breaking candy into pieces wipe excess butter off with paper towel. When candy is cool, break into pieces and enjoy! (Be careful with the teeth.)
