"Red Beans & Sausage"

Recipe Introduction
If you like spicy food, you can add more of Franks hot sauce to this dish, if you don't, you can omit the hot sauce altogether.
List of Ingredients
1 medium Green Pepper (chopped)
1 medium Onion (chopped)
1 T. Olive Oil
12 oz. or 1 lb. Sausage (Jimmy Dean or Bob Evans)
3 cloves Garlic (minced)
2 cans (15-1/2 ounces each) Kidney Beans (drained & rinsed)
3/4 C. Water
1 t. Cajun seasoning (I used 1/2 t. ground Cumin, 1/4 t. Chili Powder & 1/4 t. ground Coriander)
1 t. Frank's Hot Sauce (more or less to taste)
1 C. Brown Rice (cook according to package directions)
Salsa:
1-1/2 C. Plum Tomatos, chopped
2 T. minced Jalapeno Pepper
1/4 C. Red Onion, chopped
1/4 C. Green Pepper, chopped
2 T. fresh Cilantro (chopped)

In a fry pan, brown the sausage in the olive oil. About half way through the browning process, add the onion, green pepper & garlic; brown the rest of the way, then drain fat. To a medium size sauce pan add sausage mixture, beans, water, seasonings & hot sauce; bring to a boil, then simmer for 20 minutes. In the mean time cook rice according to package direction. Prepare the salsa earlier in the day and refrigerate so ingrediant flavors have time to meld together. Mix all 6 ingrediants well and put into a small container. Ladel some of the red bean & sausage mixture over rice and top with salsa.... Enjoy!
