Recipe Introduction
This is a lovely recipe. I added the Franks Hot Sauce to it and it gives it a nice kick.
List of Ingredients
2 T. Olive Oil
1 large Onion (diced)
1 t. Garlic (minced)
2 Carrots (peeled & diced)
2 c. Tomatoes (diced)
2 T. fresh Basil (chopped) or 2 t. dried basil
2 Zucchini (diced)
1 c. Chicken Broth
2 cans Cannellini (or) Navy Beans (rinse & drain)
1 T. Franks Hot Pepper Sauce
3/4 lb. Penne Pasta (cook according to package directions)
1/2 c. Parmesan Cheese (grated)Recipe
Heat oil in large soup pot. Add onion, garlic & carrots. Cook until just soft. Add the tomatoes, basil, zuccini and broth. Cover & simmer for 10 minutes. Add the beans and hot sauce and cook for 5 minutes longer. Cook & drain pasta in seperate pot. Toss in cheese. Place in bowls and top with the vegetable sauce....
