    Another of our favorite soups.

    List of Ingredients




    1/3 c. chopped Onion
    1/3 c. chopped Celery
    2 T. Butter
    6 c. diced & peeled Potatoes
    3 c. Chicken Broth
    2 c. (8oz.) shredded Cheddar Cheese
    2 c. Milk
    1/4 t. Pepper
    Dash Paprika
    1 or 2 cloves Garlic (minced)
    Seasoned Croutons and minced fresh Parsley

    Recipe



    In large sauce pan, saute onion & celery in butter until tender. Add potatoes and broth; bring to a boil. Reduce heat; cover & simmer for 15 minutes or until potatoes are tender. Use potato masher to mash potatoes in the soup. Stir in the cheese, milk, pepper, paprika & garlic. Cook and stir over low heat until cheese is melted. Garnish with croutons & parsley.
