BRUSCHETTA

List of Ingredients
- 4 fresh tomatoes, peeled, chopped and well drained
- fresh basil
- 2 cloves garlic, finely minced or pressed
- olive oil
- a shake of red wine vinegar
- salt & fresh ground pepper to taste
- french or italian bread slices
- fresh parmesan cheese, grated or sliced
Instructions
- After draining tomatoes, add remaining ingredients and mix well.
- Cover and refrigerate for several hours.
- Brush bread with olive oil on both sides and grill till lightly toasted.
- Slightly drain tomatoes of excess liquid again. Mound on grilled bread.
- Top with fresh parmesan cheese and bake or broil till just heated through and cheese begins to melt.
