    List of Ingredients


    • 4 fresh tomatoes, peeled, chopped and well drained
    • fresh basil
    • 2 cloves garlic, finely minced or pressed
    • olive oil
    • a shake of red wine vinegar
    • salt & fresh ground pepper to taste
    • french or italian bread slices
    • fresh parmesan cheese, grated or sliced


    Instructions


    1. After draining tomatoes, add remaining ingredients and mix well.
    2. Cover and refrigerate for several hours.
    3. Brush bread with olive oil on both sides and grill till lightly toasted.
    4. Slightly drain tomatoes of excess liquid again. Mound on grilled bread.
    5. Top with fresh parmesan cheese and bake or broil till just heated through and cheese begins to melt.
