SPINACH BRUNCH CASSEROLE

List of Ingredients
6-8 slices good bacon, fried crisp
1 small onion, diced
1 (16-ounce) bag of chopped frozen spinach, thawed and squeezed dry
2 garlic cloves, finely minced
Salt and pepper to taste
½ teaspoon freshly grated nutmeg
6-8 cups Italian bread, cubed
Shredded Italian 6-cheese blend
3 cups half and half
10 large eggs
Recipe
Spray a 9x13-inch baking dish with Pam. In a medium size heavy skillet, fry bacon until done. Remove to paper towels and reserve drippings. Add onion to drippings, cook 2 or 3 minutes then add garlic. Cook 2 or 3 more minutes then add spinach and seasonings. Heat through.
In a medium bowl, beat eggs until light; add half and half and beat well. Layer half the bread cubes in the prepared baking dish. Layer half the spinach on the bread cubes andsprinkle with cheese. Repeat. Pour egg mixture evenly over all. Cover and refrigerate 8 to 12 hours. Bake in a preheated 350 degree oven until golden and lightly set.
