COOKINKAT'S CRAB CAKES

2 eggs
2 Tbsp. mayonnaise
1 tsp. Creole mustard
1/3 cup minced onion
1 lb. crab meat (claw meat is fine)
Tony's Creole Seasoning
1 cup bread crumbs
Oil for fryingRecipe
In a large bowl, blend together eggs, mayonnaise, mustard and onions. Beat well. Fold in crab meat, then add Tony's Creole Seasoning. Mix well. Using a tablespoon, dip out a large spoonful. Form into a round cake, then coat each side with bread crumbs and refrigerate for at least an hour.
In a heavy skillet, heat a small bit of oil to 350 degrees. Fry each crab cake until golden brown. Remove and drain on paper towels.
