FATIMA FRUIT SALAD

1/2 cup sugar
2 TBSP. cornstarch
20 oz. can pineapple chunks drained and liquid reserved
1 TBSP. lemon juice
1 TBSP. grated orange peel
1/3 cup orange juice
11 oz. can mandarin oranges, drained
2 medium apples, unpeeled and cut in chunks (red and green)
2 bananas sliced (optional)
Seedless grapes (red and green)
Recipe
In small saucepan, combine sugar and cornstarch. Blend in 3/4 cup of reserved pineapple liquid, lemon juice, orange peel and orange juice. Cook over medium heat, stirring constantly until mixture boils and thickens. Boil and stir one minute. In large bowl combine oranges, apple, banana and pineapple. While hot, pour sauce over fruit. Refrigerate uncovered several hours or overnight.
NOTES: I have not added the bananas as they tend to get slimy.
I have also used blueberries, but only add them at the last minute. They will turn the juice and the pineapples a strange blue color is added too early.
