2 cans black-eyed peas
1/2 lb. smoked sausage, diced
1/4 cup diced celery
1/4 cup diced onion
1 small diced red pepper
red pepper flakes and diced jalapenos, optional
1 toe garlic, pressed
A few shakes of Tony Chachere's to tasteRecipe
In stockpot, sweat the celery, onion, bell pepper and sausage. Cook for 3 to 5 minutes on medium heat. Add black-eyed peas and stir til combined. Simmer for 3 to 4 minutes; add crushed red pepper and jalapenos for spice and press the garlic into mixture. Simmer and enjoy!
