    COOKINKAT'S BLACK BEAN SOUP

    Recipe Introduction


    We tried to duplicate a black bean soup we have at Vickery's in South Carolina every summer. We ended up with a better version thanks to the spices!


    List of Ingredients


    • olive oil (just enough to saute veggies)
    • 1 yellow onion
    • 4 or more cloves garlic
    • 2 cans black beans undrained
    • 1-1 1/2 quarts water
    • 1 Tbsp. cumin seed
    • 1/2 Tbsp. oregano
    • 2 bay leaves
    • 1/2 Tbsp. salt
    • 1 tsp. fresh black pepper
    • 3 Tbsp. parsley
    • 1/2 tsp red pepper
    • 1/8 cup sherry wine
    • 1/2 Tbsp. brown sugar
    • 1/2 Tbsp. lemon juice


    Instructions


    1. Saute onions & garlic in olive oil for 10 minutes.
    2. Add beans, water, cumin, oregano, bay leaves, salt, peppers, & parsley.
    3. Bring to a boil, simmer uncovered for 1 1/2-2 hours. Smash some beans to thicken if desired.
    4. Add sherry, sugar, and lemon juice. Simmer 30 more minutes.
    5. Serve with a dollop of sour cream.
