COOKINKAT'S BLACK BEAN SOUP

Recipe Introduction
We tried to duplicate a black bean soup we have at Vickery's in South Carolina every summer. We ended up with a better version thanks to the spices!
List of Ingredients
- olive oil (just enough to saute veggies)
- 1 yellow onion
- 4 or more cloves garlic
- 2 cans black beans undrained
- 1-1 1/2 quarts water
- 1 Tbsp. cumin seed
- 1/2 Tbsp. oregano
- 2 bay leaves
- 1/2 Tbsp. salt
- 1 tsp. fresh black pepper
- 3 Tbsp. parsley
- 1/2 tsp red pepper
- 1/8 cup sherry wine
- 1/2 Tbsp. brown sugar
- 1/2 Tbsp. lemon juice
Instructions
- Saute onions & garlic in olive oil for 10 minutes.
- Add beans, water, cumin, oregano, bay leaves, salt, peppers, & parsley.
- Bring to a boil, simmer uncovered for 1 1/2-2 hours. Smash some beans to thicken if desired.
- Add sherry, sugar, and lemon juice. Simmer 30 more minutes.
- Serve with a dollop of sour cream.
