    My own adaptation

    Recipe Introduction


    A huge favorite at my house. I like to simmer this chili slowly early in the day and then let it sit to let the flavors really mingle. Yummy!

    List of Ingredients




    2 Tbsp. Olive Oil
    8 chicken breasts, cubed
    2 onions
    3 cans chicken broth
    1 can water
    2 cans diced green chiles (4 oz.)
    2 tsp. garlic powder
    2 tsp. ground cumin
    1 tsp. oregano
    finely chopped jalapeno slices to your own taste (we use about 1/4 cup pickled nacho slices)
    about 1/4 tsp. cayenne, we like it hot
    3 cans cannellini beans, drained and rinsed

    Recipe



    Lightly season chicken with salt. Saute chicken cubes and onions in the olive oil.
    Add in the chicken broth, water, green chiles, garlic powder, cumin, oregano, jalapeno slices and cayenne pepper.
    Bring to a boil, reduce heat and simmer uncovered for 45 minutes.
    Mash up 1 can of the cannellini beans and add to chili. Add other 2 cans of beans and adjust seasoning. Simmer for 30 minutes until chicken is done.
    Garnish with cheese if desired. Good with cornbread.

    Makes aabout 8-10 servings
