    Recipe Introduction


    Great to make when the corn is fresh, but cooks up well using canned!


    List of Ingredients


    • 10 ears fresh corn removed from cob or 3-4 cans corn
    • 4 Tbsp. bacon grease or butter
    • 1 cup chopped onion
    • 1 bell pepper, chopped
    • 4 cloves garlic
    • 1 can stewed tomatoes with peppers, onions(could use Ro-Tel)
    • Tony Chachere's Creole seasoning


    Instructions


    1. In a heavy pot saute onion, garlic and bell pepper.
    2. Add corn and tomatoes. Adjust seasoning.
    3. Cook covered about 1 hour.
