Recipe Introduction
Great to make when the corn is fresh, but cooks up well using canned!
List of Ingredients
- 10 ears fresh corn removed from cob or 3-4 cans corn
- 4 Tbsp. bacon grease or butter
- 1 cup chopped onion
- 1 bell pepper, chopped
- 4 cloves garlic
- 1 can stewed tomatoes with peppers, onions(could use Ro-Tel)
- Tony Chachere's Creole seasoning
Instructions
- In a heavy pot saute onion, garlic and bell pepper.
- Add corn and tomatoes. Adjust seasoning.
- Cook covered about 1 hour.
