    ROASTED BRUSSELS SPROUTS

    1-1/2 lbs fresh brussels sprouts
    3 tbsp. extra virgin olive oil
    3/4 tsp. kosher salt
    1/2 tsp. freshly ground black pepper

    Recipe



    Preheat oven to 400 degrees F.
    Cut off the ends of the brussels sprouts and clean them. Cut off any yellow outer leaves.
    Mix them in a bowl with the olive oil, salt, and pepper. Transfer them to a sheet pan and roast for 35-40 minutes, until crisp outside and tender inside (I used my cast iron skillet for the roasting.)
    Shake the pan from time to time to brown them evenly. Sprinkle with more salt if desired and serve hot.
