Hot Milk Cake

Recipe Introduction
This is a great cake to serve as shortcake. They can be made ahead of time and frozen.
List of Ingredients
4 eggs
2 c. sugar
2-1/4 c. flour
2-1/4 tsp. baking powder
1 tsp vanilla
1-1/4 c. milk
10 tbsp. butter)
Recipe
Beat eggs on high speed until thick, about 5 minutes. Gradually add sugar until mixture is light and fluffy. Combine flour and baking powder; add to batter with vanilla and beat until smooth. Heat milk and margarine together just until margarine melts. Add to batter, beating until combined. (Batter will be very runny) Pour into greased 9x13 pan, bake @ 350 for 30-35 minutes or until done.
To freeze: line baking pan with foil before greasing. When the cake is still warm (but not hot) lift the foil & cake out and let cool. Completely wrap in foil and freeze. We made these to sell strawberry shortcake on and froze them all ahead of time.
