    "I usually serve a hearty mixed green salad and garlic bread. This is not my original recipe but one of my favorites."

    List of Ingredients




    8 chicken thighs or 6 half breasts
    1 cube butter
    salt and pepper to taste
    paprika 1 7-ounce package corn chips, coarsely crushed
    1/2 cup thinly sliced green onions, including tender tops
    1 small can sliced ripe olives
    1 15-ounce can marinara or enchalada sauce
    1 cup grated cheddar cheese

    Recipe






    Melt butter in 9 x 13 inch baking dish.

    Roll chicken pieces in melted butter to cover all sides.

    Arrange chicken evenly in baking dish, season to taste.

    Bake 45 minutes at 325 degrees.

    Remove from oven. Sprinkle corn chips to cover chicken.

    Sprinkle onions and olives over chips.

    Pour on sauce, evenly.

    Spread grated cheese to cover entire dish.

    Sprinkle entire top of dish with additional paprika.

    Return to oven and bake an additional 30 minutes at 350 degrees.

    Serve at once. Makes 4 to 6 servings.
