Carroll O'Connor's Eggplant Siciliana

List of Ingredients
2 large eggplants, peeled, sliced 1/2 inch thick, salted and drained of water
1/2 cup oil
3 tablespoons chopped basil
1 cup grated Parmesan cheese Flour
4 hardboiled eggs, sliced
1/2 pound Mozzarella cheese, sliced
1 1/2 cups tomato sauce
salt and pepper Recipe
Dust the eggplant slices with flour. Heat the oil in a very large frying pan over high heat and brown the eggplant very quickly on both sides. Arrange half of the slices in a shallow baking dish and cover with slices of Mozzarella, eggs and chopped basil. Season lightly with salt and pepper, cover with the remaning slices of eggplant and sprinkle with grated cheese. Place in a 375 degree oven and bake for 20 minutes or until the top is golden. Serves 6.
