Red Skelton's Ham Hock and Lima Beans

1 one-lb package large, dried lima beans
1 large smoked ham hock
1 large onion
2 large stalks celery 1 tsp salt
2 whole peppercorns
2 large carrots
Pinch of nutmeg Recipe
Cover lima beans completely with water in large bowl. Let stand overnight. Place lima beans in large pot, saving water. Add half of water to beans and cook over low heat for 15 minutes in covered pot. Dice onion, celery and carrots; add peppercorns, salt and nutmeg. Place in bean pot, simmer another 15 minutes. Wash ham hock and place in pot; simmer 1 hour. Add more water if necessary. Do not over season. Ham hock is highly seasoned and will add spice to recipe. Serves 4.
