    1 pound mozzarella cheese, sliced into 1/2 inch slabs
    2 eggs, lightly beaten
    1/2 cup all-purpose flour
    1 cup bread crumbs (herb seasoned)

    Olive oil
    1-1/4 cups pizza sauce
    1 can flat anchovies (about 1.75 ounces)

    Dip each slice of cheese into egg, then flour, back into egg and then into bread crumbs. Pack bread crumbs against surface of cheese so it forms a good crust. Place slices on plat and freeze for 20 minutes or refrigerate for 1 hour. In skillet, heat 1/4 inch oil until very hot. Place cold cheese slices into oil and allow them to brown crisply on each side. When cheese is just beginning to ooze through the crust, carefully lift slices out of pan. Place on paper towels to drain. Meanwhile, heat pizza sauce in small sauce pan. On each serving plate, place large tablespoon of sauce. Top with 1 or 2 slices of fried cheese, another tablespoon of sauce and a strip of anchovy. Makes 4 to 6 servings.
