Danish Rice Pudding with Berries

1 cup uncooked regular rice, rinsed
3 cups milk
4 cups water
1 teaspoon salt
3 large eggs
1 cup sugar
1 cup raisins (optional)
1 teaspoon vanilla (optional)

Preheat oven to 325 degrees. Rinse rice. Place water, salt and rice in large pan and boil about 2 minutes. Turn heat down. Simmer for 12 to 14 minutes or until water is absorbed. In blender, whirl eggs, milk, vanilla and sugar until frothy. Add to rice in greased 9x13 inch pan or mix all and pour into custard cups. If desired, wash and add raisins. Sprinkle with nutmeg or cinnamon. Bake 50 to 60 minutes (less if using cups) until set. Serve warm or chilled with berry sauce. Makes 12 servings.
BERRY SAUCE:
2 cups berries (any kind)
1 1/2 t. water
1/2 cup sugar
Rinse berries and simmer with water over low heat until tender. Add sugar and cook until dissolved. Serve over pudding. Can also be used for pancakes or waffles.
