Pineapple Cobbler

Cooking spray
4 tablespoons shredded or flaked coconut
1 (20-ounce) can pineapple chunks, drained
3/4 cup sugar
1/4 cup self-rising flour
1/2 cup (1 stick) margarine, melted
1 cup crushed Ritz crackers
1 cup shredded mild cheddar cheese
COAT a 9-by-5-inch pan lightly with cooking spray.
Recipe
MIX coconut with pineapple chunks and place evenly in prepared pan. Sprinkle sugar and flour evenly over pineapple. Pour melted margarine over all. Top with crushed crackers and shredded cheddar cheese.
BAKE at 375 to 400 degrees about 20 minutes, or until brown and bubbly
