Ice Cream Cookies

1 pkg. white cake mix
2 eggs
1/2 cup butter, melted
1 3/4 cup candy coated chocolate pieces, divided
2 quarts icecream, any flavor, slightly softenedRecipe
Preheat oven to 375 degrees and grease the baking sheets.
In a large mixer bowl, combine cake mix, eggs and melted butter. Beat on low speed for one minute or just until smooth. Stir in 1 1/4 cups of the candy coated chocolate bits. Mix well.
Drop dough by heaping spoon fulls onto prepared baking sheet 2 inches apart. Flatten slightly with floured fingers. Press 7-8 of the remaining candies into each cookie. Bake, one sheet at a time, for 10-14 minutes or until lightly browned. Cool one minute on baking sheet or until firm, then trnasfer cookies to racks and cool completely.
Sandwich two cookies with about 1/2 cup of the icecream between them. Press together lightly. Wrap well in plastic wrap. Freeze until firm, about one hour, or for up to 3 months.
