    Fluffy Chocolate Mint Cake

    CAKE

    1 chocolate mint cake mix
    1 1/2 large containers whipped topping
    1/8 cup creme de menthe (optional)
    2 tsp. mint flavoring
    green food coloring


    CHOCOLATE SAUCE

    1/2 cup sugar
    4 tsp. cornstarch
    1/2 cup water
    1 - 1 oz. square unsweetened chocolate
    dash salt
    1 Tbsl. butter
    1/2 tsp. vanilla

    Make cake according to directions on box. Pour into 2 layer pans. After baking, remove from pans and freeze. Cut each layer inhalf while partially frozen, making 4 layers. Add 1/8 cup creme de menthe and the flovoring to whipped topping. Tint with green food coloring. Forst each layer generously with whipped cream mixture. Refrigerate. Cake mositens and is better if can sit at least several hours before serving. Drizzle chocolate sauce over each serving.


    To prepare sauce, combine 1/2 cup sugar and the cornstarch in saucepan. Add water, chocolate and salt. Cook and stir until thickened and bubbly. Remove from heat, stir in butter and vanilla.
