Mom's Pumpkin Roll

List of Ingredients
Beat 3 large eggs until thick and lemon color. gradually add 1 cup white sugar.
Continue to beat til creamy and pale on low speed. beat in
2/3 cup pumpkin and
3/4 cup flour,
2 tsp cinnamon,
1 tsp. baking powder,
1 tsp. ginger,
1/2 tsp nutmeg and
1/2tsp. salt. Recipe
line cookie sheet with wax paper and spray with pam.
spread in pan. bake at 375@ for 15 mins.
turn on towel sprinkled with 1/3 cup icing sugar
roll up in towel.
when cool, unroll and spread on whipped cream (cool whip
or dream whip] reroll without towel. and freeze.
For a variation and it is much easier than the rollup, Mom bakes two sheets at 350@ , cool and remove from pans, take wax paper off.
Spread whip cream and put second layer on top and spread icing sugar over top. Cut when cool.
