    CAKE
    1 pkg (450 g) ROBIN HOOD Angel Food Cake Mix 1 pkg
    1 cup water 250 mL
    1/3 cup orange juice 75 mL
    1 tbsp orange rind, grated 15 mL
    3 drop orange or yellow food colouring, optional 3 drop

    FILLING & TOPPING
    2 cups whipping cream 500 mL
    2 tbsp icing sugar 30 mL
    2 tsp orange rind, grated 10 mL
    Mandarin orange segments, optional

    CAKE

    COMBINE all ingredients in large mixer bowl. Beat on low speed 30 seconds, then on medium speed 1 minute. Pour into ungreased 10" (4 L) tube pan.

    BAKE at 325°F (160°C) for 50-60 minutes. Place upside down to cool completely then remove from pan. Cut horizontally into 3 layer.

    FILLING & TOPPING

    BEAT cream and icing sugar to stiff peaks. Fold in rind. Spread between layers and on top of cake. Garnish with mandarins, if desired. Chill until serving.
