    Pineapple Upside Down Cake (another one)

    List of Ingredients

    Topping:
    4 tbsp. shortening
    1 cup brown sugar
    1 can sliced pineapple
    Cherries

    Batter:
    1/4 cup shortening
    3/4 cup sugar
    1 egg
    1 1/2 cups flour
    1/2 cup milk or pineapple juice
    2 tsp. baking powder
    1/2 tsp. salt


    Recipe

    Melt shortening in bottom of pan. Add brown sugar. Blend thouroughly and spread evenly in bottom of pan. Arrange pineapple slices over surface of mixture, a cherry placed in the center of each slice.

    Batter: Blend shorteing with sugar and egg until fluffy. Add sifted dry ingredients alternately with milk or fruit juice to the shortening mixture. Beat until smooth.

    Cover the prepared pineapple slices with batter and bake at 350 degrees for approximately 30 minutes or until cake is done. While hot, turn out of pan upside down on serving plate. Serve warm, plain or with whipped cream.
