    Pineapple Upsidedown Cake

    List of Ingredients

    2 tbsp. margerine
    9 pineapple rings
    9 marashino cherries
    3/4 c. brown sugar
    1/2 c. soft margerine
    3/4 c. white sugar
    2 eggs, beaten
    1 tsp. vanilla
    1 1/2 c. flour
    2 tsp. baking powder
    1/2 tsp. salt
    2/3 c. milk


    Recipe

    Preheat oven to 350 degrees. Melt first amount of margerine in a 9x9 pann. Arrange rings over melted butter. Insert cherries inside centreof rings. Sprinkle with brown sugar. Set aside. Cream second amounts of margerine and sugar together well in mixing bowl. Add eggs and beat. Mix in vanilla. Mix flour, baking powder and salt, together in small bowl. Add flour mix to margerine mixture in 3 parts alternately with milk in 2 parts, beginning and ending with flour. Stir after each addition until blended. Pour overtop pineapples. Bake in oven for 40-50 minutees. Loosen edges with knife. Invert onto plate and cool. Serve with whipped cream.
