    Rhubarb Cake

    Recipe Introduction

    This is a great recipe for frozen rhubarb from your garden too.

    List of Ingredients

    1-1/2 c. brown sugar
    1/2 c. shortening
    2 eggs
    1-1/4 c. flour
    1 tsp. vanilla
    1/2 tsp. salt
    1 tsp. baking soda
    1 c. sour milk
    1-1/2 c. chopped rhubarb

    Topping:

    1/2 c. white sugar
    1 tbsp. butter or margerine
    1 tsp. cinnamon

    Recipe

    Cake:

    Preheat oven to 325 degrees. Blend sugar and shortening. Add eggs and vanilla. Dissolve baking soda in sour milk. Add flour, salt and milk. Stir in rhubarb. Pour into an 8x12 inch glass pan.

    Topping:

    Blend topping ingredients and sprinkle over batter. Bake in preheated oven for 50 minutes.

    Note: Slice rhubarb very thin. Rhubarb will discolour a metal pan and mark it, so make sure to use a glass cake pan.
