3/4 cup finely rolled graham crackers
1 (8oz) pkg. cream cheese
1 (20 oz) can crushed pineapple
2 tbsp. melted butter
1 cup icing sugar
2 cup whipped cream
1 1/2 cup coconut
1 tsp. rum flavoringRecipe
Mix crumbs and butter. Press in bottom of 9 inch springform pan. Bake at 350 degrees for 10 minutes. Mix cheese with icing sugar until fluffy. Stir in pineapple and coconut. Whip cream with rum flavoring. Add to cheese mixture. Refrigerate. In summer you can replace the pineapple and coconut with any fruit you desire.
