24 graham wafers crushed
1/4 cup melted butter
1/2 cup sugar
1 8 oz pkg of cream cheese
1 tbsp of plain gelatin (one packet)
1/8 cup hot water
3 cups whipped cream (sweetened to taste)
fresh raspberries (about 3 cups)
Recipe
- Mix the graham crumbs, melted butter and sugar together and press into the bottom of a springform pan.
- A pie plate will work for this as well.
- Put cream cheese in a medium size bowl.
- Using a mixer, soften the cream cheese.
- Add the gelatin to the hot water and dissolve.
- Mix together with the cream cheese.
- Add the whipped cream, and approximately one cup of the raspberries.
- Mix just until blended. Pour into the pan.
- Refrigerate at least three hours.
- Serve with dollops of whipped cream, and a generous handful of fresh raspberries.
