List of Ingredients
3-4 lb. chicken, cut up
1/4 c. flour
1/4 c. olive oil
2 medium onions, sliced
1 clove garlic, minced
2-1/2 cups canned tomatoes
5-1/2 oz. can tomato sauce
1 tsp. salt, optional
1/2 tsp pepper
1 bay leaf
1/4 c. white wine (or apple juice)
Recipe
Dust chicken with flour, brown in oil. Remove chicken from pan. Add onion and garlic, saute until tender, but not brown. Return chicken to pan. Combine remaining ingredients, except wine, pour over chicken. Cover and simmer for 45 minutes. Stir in wine, cook, uncovered for about 20 minutes or until chicken is tender and sauce is thickened. Skim off fat. Remove bay leaf.
Serve with rice or noodles. About 6 servings.
