6 chicken breasts (skin removed)
salt and freshly groud pepper
1/4 cup dijon mustard
1/3 cup plain yohurt
1/2 cup fine fresh bread crumbs
1 tsp. thyme
Recipe
Sprinkle chicken lightly with salt and pepper. Mix mustard into yogurt. In another bowl, mix bread crumbs, thyme, 1/2 tsp salt and 1/2 tsp. pepper. Spread each piece chicken with mustard mixture, then roll in bread crumb mixture. Place chicken in single layer on lightly greased baking sheet. Bake at 350 degrees for 45-50 minutes or utnil golden brown and meat in no longer pink. Yield 6 servings.
